I think the first one is called Zuppa di Cozze....I used to eat it all the time at this old Italian restaurant in college days....besides, I dont see any prawns scratch

Hi Mach!

No, I'm from Teruel, a nice small town in Spain. It's one of many places in this country which is specialized in cured ham (prosciutto ham in Italy, jamón serrano in Spain) and, in this case, in olive oil too. The mixture is perfect! Very Happy

It is very similar. Both of them salt cured ham, with the difference on the time taken in elaboration. As far as I know, jamon serrano (or jamon ibérico, another variety of spanish cured ham) takes longer on curing it and, as a result, taste is a bit more intense and texture is drier. Proscittuto then has more humidity and because of this it is served on very thin slices.

This is what I know from people who lived in Italy, but I could be wrong...

Good question... been searching for local recipes links from my province but there are not too much, and all of them are written in Spanish. It's not as popular as, say, paella, fabada, tapas or other Spanish food, which are more popular overseas ( [url=spanishfood.about.com]this link is good for learning them[/url] ).

Anyway, had anyone some cured ham at home, there's an extremely easy one to start with, and delicious!. Here is it:

- Grate two or three tomatoes, add them a bit of olive oil and a bit of salt. Mix it and let it on the fridge.
- On another recipient, mix a bit of olive oil, two grated cloves of garlic and parsley.
- Put the ham on a plate apart. It will be served like that. On another plate put toasted bread slices.
- Spread the garlic, oil and parsley mixture over bread slices and serve them on a plate.

So now we have a recipient with the tomato, oil and salt, a plate with the ham and a plate with the elaborated bread. The way of eating it is: put the tomato sauce over the bread, then add the ham and... enjoy!

Tonight it was time for burgers.... after baking the bread I realized it would take a huge amount of meat to fill them.
